If you’ve stumbled onto one of my posts, you may be wondering who the heck is behind it and why I am writing this all. And here you have it.
Simply put, I’ve always loved traveling whether a road trip, a hiking trip, or a far across the world trip and have been fortunate enough to get to do a fair amount of it around globe. Then a couple years ago, I randomly discovered that my 25+ years of IBS had not in fact been IBS but instead been Celiac. Uh joy.

That certainly came as a major surprise considering just how much bread I ate on a regular day, much less a travel one. I mean touring bakeries was one of my things. Bread with a side of bread was a regular meal. Sigh.
Fine (ok, not fine, not fine at all, but whatcha gonna do)…
I’d do the GF thing, do it 100%, but giving up my travels? Not a chance.
Since then, I’ve been around the world and back again. I’ve toured many easier spots, some harder ones, eaten at a hundred great places, two hundred “it works” ones, made three hundred peanut butter sandwiches in a hotel room / rental car / train, and had so many airport yogurts I can’t count.
Given how often I turn to the experiences of others to help in my travel planning, seems only fair that I started sharing my experiences too. Plus what else do I have to do as I sit here at 38,000’ flying somewhere past the tip of greenland.
